BackYear 11 Visit to Bread Ahead, Borough Market
Year 11 food GCSE students had an exciting visit to Bread Ahead Bakery, Borough Market. First they explored the market full of every food commodity you could imagine, including ginormous wedges of cheese and live lobster. There were many street food stalls to try a broad range of multicultural foods and lots of ideas and inspirational pastries to photograph and sample.
The students then attended the pizza workshop at Bread Ahead Bakery where they could further understand the science behind gluten formation which is crucial for successful bread-making. Gluten gives bread its structure and elasticity. Kneading and stretching the dough helps develop this gluten network, which creates the desired texture.
Students had great fun kneading their dough to each make a margherita pizza and grissini breadsticks. They were even asked to slap and throw the dough in the air which was brilliant fun!
Exploring these elements of breadmaking gave the Year 11 invaluable insights into the art and science of bread-making, which complements their GCSE studies in food.
Typical ingredients for an authentic pizza? Polenta, fresh yeast, mozzarella, and basil which elevate the flavour and texture of bread. Polenta can add a unique crunch, while fresh yeast introduces a liveliness to the dough. Mozzarella and basil, when combined in bread, provide an appealing savoury taste.
Well done to all of the Year 11s who really made the most of this fantastic opportunity to deepen their knowledge and develop complex and technical cooking skills. It was great to see how proud they were of their achievements.
